Your everyday green beans just turned purple. And what gives them a purple hue is a pigment called Anthocyanins. These are the most potent of phytonutrients that help us fight ill-effects of aging in addition to having anti-oxidant anti-inflammatory, and anticarcinogenic properties. Also known as Royal Burgundy Beans, these lose their purple color and turn green when cooked or exposed to heat. As far as the nutritional benefits are concerned, they are more or less the same as the green beans. Rather color rich foods, such as these are higher on nutrients and promise even better health benefits. But it is said that purple beans taste a little different and leave the palette with a slight sweet and nutty flavor. So go ahead and either steam, saute, stir-fry, roast, grill or bake a delicious serving of this mouth-watering dish.
Give the routine a break and try out this pretty purple variety of beans. We are sure you won't be disappointed and will end up growing more than just a bunch at your home too!
Planting instructions
Bean seeds should be planted 1 inch deep and 2 inches apart. Add manure to the soil before planting.
Dig holes in the soil according to the seed type and sow the seeds. Cover the seeds lightly with soil. Water the plants regularly so that the soil remains moist enough throughout the growing process.
Beans Purple seeds take 5-6 days to sprout. Adding organic mulch to the soil will help retain the moisture for a prolonged period of time. Continue the regular watering routine. Make sure that the soil remains moist at all times.

Pests & Diseases
Pests: Aphids, Mites, Cutworms, Beetles. Diseases - White mold, mosaic, fungal diseases. Watering the plants in the morning helps to avoid fungal diseases. Companion plants significantly reduce incoming pests on your crops. Watering down the plants with a strong stream of water followed by an application of diluted neem or castor oil on the pest-affected parts of the plant will help to get rid of them.
soil
Well-drained loamy soil, free of weeds, trash, and stones, etc. with a pH level of 6.0 to 6.8.
spot
Beans are great for the ground where they can get at least 5-6 hours of sunlight in a day.
Temperature
The ideal germination temperature for beans is between 18°C to 24°C.
watering
Seeds need to be watered regularly. Make sure that the soil is moist for the first 2 weeks of planting. Once the seeds have germinated, water the plants by sprinkling for the following 2 weeks. Maintain a regular watering schedule. Keep a tab on the moisture level of the soil.
how to harvest
Beans purple are ready for their first harvest in 45-75 days. When the bean pods are 3 inches to 4 inches in length, they would be ready to harvest.
While harvesting, pull the pods in a downward direction to avoid uprooting the plant. Don’t use hard knives or scissors for picking the beans. You can simply pinch them off with your fingers.
After harvesting the produce, water the plants and feed them some liquid fertilizers to promote the growth of the next produce. Beans can be stored in the refrigerator by wrapping in a paper towel for up to 7 days.
